Trace heavy metals can react with ingredients present in processed food, resulting in several negative effects on freshness and appearance. Solvitar™ forms a stable complex with the trace metal ions and prevents undesirable food spoilage reactions without influencing taste or quality.

Trace metal ions are present in all processed food products from raw materials, process water and process equipment. Typical trace metals are copper, iron, manganese and zinc. They can interact with other compounds in food and cause food spoilage reactions like rancidity, discoloration and vitamin C degradation. Solvitar forms a stable complex with the trace metal ions and prevents against these undesirable food spoilage reactions without influencing taste or quality.

By adding Solvitar there are two types of unwanted reactions in food and beverages that can be controlled:

  1. A reaction between trace metal ions and other organic and inorganic components can be retarded or prevented by addition of Solvitar:
    - Promote color retention
    - Promote texture retention
    - Promote product clarity
    - Act as anti-gushing agents
    - Retard struvite formation

  2. Sequestering agents like Solvitar control/reduce oxidation catalyzed by trace heavy metal ions. The function of Solvitar is to capture the heavy metals and:
    - Act as a preservative
    - Promote color retention
    - Promote flavor retention
    - Promote texture retention

Solvitar is a food grade calcium EDTA complex and produced according to the most stringent stringent regulations in our factory in Herkenbosch, the Netherlands.
